From December 2023 the shelf life is three years from production date.

Production dates before December 2023, are with one year shelf life from production date.

If you don't drink the whole bottle, you can refrigerate it between 7-14 days.

It takes agood 6 weeks to produce a bottle of ARENSBAK, but it took over 2 years to develop the recipes.

Co-founder Bram Kerkhof, who is a trained Gastrophysicist, with a background from Restaurant Noma's lab of fermentation, talks about the development and production of ARENSBAK.

ARENSBAK Red

 

Ingredients: Water, Cane sugar, fruit juice from concentrate : black currant, sour cherryand sour berry. Grape peel extract. Flavors: oak, Puerh tea, juniper, creminimushroom, licorice root, marigold flower, black pepper. Flavor enhancer:tartaric, lactic acid. Kombucha cultures.

ARENSBAK White

Ingredients:Water, cane sugar, quince puree, cantaloupe-melon puree. Flavors: oak, Oolongtea, lemon thyme, marigold flower. Flavor enhancer: lactic acid, tartaric,citric acid, malic acid, Kombucha cultures.

ARENSBAK Rosé

Ingredients: Tea (water, cane sugar, green tea, oak woodchips) fruit juice from concentrate(Raspberry, Elderberry),oak wood extract, acidulant (Tartratic acid, Citricacid,Lactic acid), pink peppercorn, kombucha cultures.

Non alcoholic – What does it mean

The fact that something is alcohol-free means that it must contain less than 0.5% alcohol. This amount is also referred to as residual alcohol and is physically insignificant for most people. ARENSBAK produces non-alcoholic products.

 

We strive to achieve a minimal alcohol content, but there is a very small amount of residual alcohol in ARENSBAK, which originates from our fermentation. But this is no more than 0.5%.

Fermentation has been used for millennia. The use of fermentation dates back to the Paleolithic, when food was preserved, and the process was also used in the production of beverages. Read more about fermentation.

Ecology & sustainability

At ARENSBAK, we naturally focus on the world we are a part of and work in our production and value chain to optimize all processes with a view to an organic and sustainable production.

 

Our ingredients in the production are almost all organic, which is why we expect to be able to become organic certified at some point in the near future.

 

We strive to use sustainable materials. We have deposit return-bottles and use logistics/ transport modes that avoid CO2-emissions as much as possible and we have just changed our sparkling bottles to lightweight in order to reduce our footprint

How can Arensbak be non-alcoholic, if it’s a fermented drink?

ARENSBAK uses a fermentation on the basis of Kombucha, which is a natural process that doesn’t produce much alcohol. The alcohol that is produced is transformed into organic acids resulting in a profile with an amazing fermented flavour. Our expertise in brewing the perfect Kombucha base ensures that ARENSBAK stays below a 0.5% alcohol content, after which ARENSBAK is pasteurised to maintain quality over time.

What is a Proxy Wine?

To describe the term "Proxy Wine" or simply just "Proxy" we have chosen to use the description made by Jennifer and Max from The Mindfuld Drinking Club in Berlin.

"Proxies are multi-layered compositions of every imaginable ingredient, sometimes produced using different fermentation methods. Kombucha, kvass or water kefir, juicesfrom fruits or vegetables, teas, hydrolates or infusions of herbs, flowers and spices can be the basis or ingredients of these exciting cuvées. In their complexity and feel, these non-alcoholic alternatives are modeled on the experience of great wines, but without trying to copy or imitate them."
